End of the Year and Looking Forward to 2026!

2025 has been an incredibly busy year for construction at the creamery. Our creamery building (which is being built in NY state) is complete, and the equipment is being installed.


This is a picture of the inside of the creamery and part of the equipment (the item in the front is our 50 gallon ice cream mixer / pasturizer. Only a few of the items are installed in this picture.


We expect to have the building in place and starting production by the end of January with (hopefully) all of the inspections complete!


We have tripled our ewe flock from the beginning of last year and plan on adding even more ewes during the next few months so we can ramp up production as quickly as possible. Thus far the regulatory folks have been great about meeting with us, looking over plans and making sure we are in compliance and ready to pass inspections. Speaking of inspections, we have one small addition to make and then we will be a 'grade A' dairy barn! We actually only have to be Grade B for ice cream manufacturing, however, we want to be Grade A so we can also bottle milk or make yogurt (in the future).


The first quarter is going to be very exciting with our grand opening and several big announcements!
