Progress in the Valley

Just for Ewe Creamery is located in a beautiful valley in the Eastern Ozark Highlands, nestled at the North end of our green valley surrounded by forests and green pastures. These pastures allow our sheep to produce amazing, rich creamy milk. Some large sheep dairies use a ‘confinement-based system’ where sheep are fed high levels of grain and hay and kept inside without access to pasture. We believe our pasture-based approach is a core part of what makes Just For Ewe ice cream so special. This is consistent with our ‘natural’ based production process which only uses natural ingredients and no preservatives.

Our work on the new Just for Ewe Creamery is progressing. We have tripled the size of our dairy flock with the addition of both East Friesian ewes, more East Friesian/Lucaune ewes, as well as Assaf/Lucaune ewes. We are on target to be producing enough milk to meet our ice cream production needs as we ramp up production next year. By the end of next year our goal is to be milking at least 50 ewes.

We have purchased all of the processing equipment required to meet our needs for the next four to five years. This includes a batch freezer, gallon batch pasteurizer/mixer, chiller, and the other equipment required to process up to 50 gallons of ice cream per day.
Utility work is underway. We have added a second electric service, a new backup electric generator has been ordered, and we have completed the engineering work for a new septic system for the dairy barn and creamery. The goal is to have the infrastructure work completed in the next two months.
We have approved the design of the creamery building, as well as receiving the blessing from our state diary manufacturing inspector. We are next in queue with the firm building our building, with the build processing expected to last about 4 months.
We have been blessed with some great investors which has been key to getting this project going. We have room for a few more investors, which we plan on having finalized in the next month or so.
Bottom line, it is all coming together. We are continuing to refine the flavors we will offer and have been market testing some really unique, natural flavors! If you happen to be in our ‘neck of the woods’ we would be happy to give you a tour, and let you sample some of our ice cream.
